Château Guilhem is situated in the Malepère appellation, the westernmost AOC of the Languedoc region, which stretches west from the ancient town of Carcassonne. Consequently, the grapes of the south of France - Syrah, Mourvedre, Grenache - are blended with those of Bordeaux - Merlot, Cabernet Sauvignon and Malbec. White wines are also made from both Chardonnay and Sauvignon Blanc.

The estate has been in the same family for 6 generation, but in 2004 the young dynamic Bertrand Gourdou took over, and began making the wines using organic techniques. The wines have a characteristic minerality and finesse.
