Viña Edmara Carmenère is a wonderfully ripe wine; aged in both American and French oak, it shows full, spicy flavours of surprising complexity. Originally a Bordeaux grape variety (and now all but extinct in its native land) Carmenère has become Chile's signature variety.
All the stems of the grapes are removed and berries are partially crushed. Musts are cooled to reduce the temperature immediately after crushing, to maintain flavour and aroma. Cool pre-fermentation maceration takes place for 48 hours to extract primary flavours and colour. Fermentation is in stainless steel tanks at 25°C. Total maceration period is between 20 and 25 days.
80% of the wine is aged in French and American Oak for a period of 6 to 10 months.
